Stretching and Twisting 
-After cutting the meat straight down, It leaves a chunk of flesh to work with. 
-Apply stretch and twist force onto the mass.
-Slice the mass diagonally ; according to the direction of the twist.

Ripping and Pulling 
_When the butcher cuts the meat and pull the meat to detach itself from the whole. 
_Contrast between smooth and rough surface.
